Drunken crab is a traditional dish hailing from Xinghua city, Jiangsu province and is well-loved by the locals for its exquisite flavors.

To make this dish, fresh crabs are immersed in rice wine, spices, salt, and other seasonings.

Thanks to pristine water and meticulous crab cultivation methods, Xinghua's hairy crabs are renowned for their green shells, white bellies, golden claws, yellow fuzz, hefty pincers, and robust legs. The snow-white meat melts in the mouth, while the translucent red roe is sweet and succulent.

This mouthwatering crab also offers a delightful hint of spiciness that will tantalize the taste buds.

Another must-try dish is crab roe tofu, which comes with a delightful blend of sweet crab flesh and tender tofu that is elevated with a luscious abalone sauce.
