Also known for vegetarian spring rolls, Swaddled Shreds is one of the most common street snacks in Guiyang. It got the name because its shape remind people of a baby wrapped in swaddling clothes. They are made of pancakes baked with rice flour, as thin as paper but the size of a palm, and shredded radish, Chameleon plant (fish leaf), shredded kelp, shredded cucumber, cellophane noodles, pickled radish and fried soybeans are wrapped in them.
When eating, of course, it is necessary to have hot and sour sauce blended in those fillings. The sauce exactly determines the essence of good taste, and is specific to each family's skills.
Usually, you put in as many varieties as you can, wrap them up carefully, and put sauces along the top.
