Jinyun shaobing meets Shaoxing stinky tofu

The main Jinyun shaobing store in the 5A-level Xiandu Scenic Area in Lishui, Zhejiang province, has launched a stinky tofu-filled shaobing (a kind of bucket-baked roll) after over two months of research.

The new item combines Jinyun shaobing, a national intangible cultural heritage, with Shaoxing stinky tofu, another intangible cultural heritage flavor.

Store manager and shaobing master Yang Fujia tried fried and steamed stinky tofu before finalizing the recipe. It uses authentic Shaoxing stinky tofu, fresh pork for umami, and a little chili, balancing aroma and taste while retaining the tofu's unique flavor and appealing to a broader audience.

The shaobing follows traditional charcoal-baking techniques. The dough is kneaded and filled by hand, then baked in a charcoal oven. The result is golden and crisp on the outside and tender inside, with rich layers. Priced at 15 yuan ($2.23), it has attracted many visitors.

A tourist said it was his first time trying the flavor and found it impressive. It had the distinctive aroma of stinky tofu but no unpleasant taste, combining fresh pork's rich flavor with mild spiciness.

The store now offers eight shaobing flavors, including egg yolk, durian, beef, and vegetarian, plus over 10 local snacks. Yang said Jinyun shaobing must keep innovating while preserving its fermentation and charcoal-baking methods so its traditional heritage stays vibrant.
