Qi’ao Shrimp Sauce
Popular in Qi’ao Village of Qi’ao Island in Tangjiawan Town, the Shrimp Sauce is an indigenous condiment produced with local offshore silver shrimp.
Qi’ao villagers who settled in the island came from Fujian, Taiwan, and the Zhuji Alley of Guangdong’s Heyuan City during the Southern Song Dynasty (1127-1279), bringing with them the sauce-making handicraft. Passed down from generation to generation, the technique bears not only folk craftsmanship, but also an all-inclusive memory combining social changes, ethnic pool, and folk belief that have exerted influence on their lifestyle through today.
