Hakka Salted Tea
Starting to prevail in 1744 during the reign of Emperor Ch’ien-lung (Qianlong) in the Qing Dynasty, Baijiao Town Hakka Salted Sea (Ham Cha) came from Lei Cha, or ground tea, a traditional Southern Chinese tea-based beverage or gruel. With meat in Lei Cha removed and vegetables retained, the Salted Tea contains such main ingredients as tea leaves, peanuts, soybeans, sesame, and vegetables such as lettuce, leaf lettuce, watercress, green beans, and green onions.
This was designated one of the third-group city-level intangible cultural heritage in June 2010.
