Starch soup (粉汤)
Starch soup is a savory dish of Hui ethnic origin in Xinjiang, consisting of Chinese cabbage, green onion, spinach, red pepper and fungi. Starch lumps are chopped into pieces and boiled in mutton soup along with the vegetables. Then special vinegar and white pepper are added to bring an exotic flavor to the soup.
Starch soup is one of Hui people's favorites. Xinjiang people prepare starch soup for their relatives and friends as a main course on every Eid Adha and Eid al-Fitr, traditional Muslim festivals celebrated by Hui people.
