Xuhang people enjoy rice wine in winter

People in Xuhang town, Shanghai's Jiading district, used to make rice wine in winter for the New Year. The tradition is still kept by some local old people.

Dai Baoxing, a 60-year-old local resident, has 20 years of experience in making rice wine. He inherited the skills from his father. "It is important to blend rice and water in a proper proportion and take control of the fermentation temperature," said Dai.

Rice wine, a traditional Chinese alcoholic beverage, has an alcohol content of between 15 and 25 percent. The production process takes nearly a month with four steps, including steaming the glutinous rice, blending rice and water, adding yeast and fermenting.

Every year, Dai makes hundreds of kilograms of delicious wine. Thanks to his reputation for making wine in the village, residents ask him to help make wine every year.
