Huzhou residents busy making Fenpi

Fenpi, sheet jelly made from bean or sweet potato starch, is a traditional dish in southern China. It is usually stewed with fish heads, stirred with mince pork or boiled in a hot pot.
Xu Rongfang and his wife, Chen Chunhong, from Maojiadian village, Changxing county, Huzhou have been making Fenpi for nearly 30 years.
The preparation techniques were passed down by Xu's family from generation to generation. Fenpi handmade by Xu is very popular among locals due to its soft texture and chewy taste. To ensure quality, Xu strives to do everything himself, including selecting ingredients.
The workshop run by Xu and his wife produces over 20,000 kilograms of Fenpi annually, with many people coming from afar to buy it.
Xu said that his biggest wish now is to preserve its preparation technqiues, so that more people can try out the delicacy.
