The noodles with pig intestine and blood curds are one of the main household snacks of Han ethnic group in Guiyang, Guizhou province. They integrate the slicing skill of Shanxi's Daoxiao Noodles (knife sliced noodles), the al dente nature of Sichuan's Dandan Noodles, and mellowness of Wuhan's Hot Dry Noodles, to reach the perfect blend of color and flavor. It gives you the tenderness of blood curds, chewiness of noodles, tasty spiciness, and toothsome soup all in such one bowl of noodles that is red in color but not hot, oily but not greasy, and al dente but not unboiled.
