Stinky vinegar

Stinky vinegar has a history of more than 2,000 years. It is a local specialty that remains popular in the northern part of Baiyun district of Guangzhou. The vinegar is made from glutinous and sticky rice. Lactic acid bacteria is produced during the fermentation, resulting in the unique smell; thus its name.

Despite the special smell, the vinegar has a sour flavor, a refreshing taste, and a tonic effect; it can enhance appetite. Baiyun residents have developed innovative dishes with stinky vinegar as a complement, such as chicken soup with stinky vinegar.
