One of the must-try Fuzhou delicacies is the scrumptious fotiaoqiang, or Buddha Jumps Over the Wall, which is probably the most iconic dish in Fujian province and even China.

It is believed that the dish's name came about after people claimed that even the Buddha would jump over the wall to savor this delicious dish.

Fotiaoqiang features a mouthwatering combination of braised seafood such as sea cucumber, sea-ear, dried scallops and fish glue, as well as quail eggs, bamboo shoots and pork.

Depending on the specific recipe, it can contain up to thirty main ingredients and twelve condiments. It is said that each ingredient is good for health. The preparation of this dish can take up to two days.
