Taste of winter: Radish

A saying in China goes that, "One should eat radishes in the winter and ginger in the summer". In addition to its health benefits, radishes are one of the most economical vegetables in the winter.
Mixed shredded radishes with cold jellyfish and mixed shredded radishes with sauce are commonly seen on the dining tables of Hai'an natives.

Radishes also pair well with meat, with a bowl of stewed pork with radishes being a particular dish with a fragrance that can permeate an entire room.
To make the dish, stir-fry diced clean marbled meat in a pot with sliced ginger, spring onions, sugar, dark soy sauce, and light soy sauce. Next, pour some water into the pot and let it boil on high heat. Once it is boiling, lower the heat and simmer. When the meat is almost done, put diced radishes into the pot and stew them together for a while. Once completed, the stewed pork with radishes is cooked.

Hai'an natives also like pickled radish and they can eat the dish all year round. Under the warm sunshine of winter, air-dried radishes are hung in the courtyards of Hai'an natives waiting to be pickled.
