'Old fire' soups

Soups are a very important part of Cantonese culture, especially in Guangzhou, and they are commonplace at local banquets. 

"Old fire" soups (lao huo liang tang, literally "slow cooked soups") are not only famous for their flavor, but are also consumed for medicinal purposes.

The history of old fire soups in Guangzhou stretches back a long time, and it is closely linked with the hot and humid climate of Guangzhou, as the flavor of the soup changes with the seasons. Over the years, the soup has become an indispensable part of life in Guangzhou. Together with herbal tea, it has become a symbol of Guangzhou's culinary culture.

There are many kinds of old fire soup, and a variety of ingredients and cooking methods can be used to make soups with different flavors and different functions.
