Every spring, as the Yellow River thaws, vast schools of shad make their way to the Yellow River estuary in Dongying to spawn. After remaining dormant all winter, their bodies are lean and their flavor exceptionally fresh, making them a seasonal delicacy prized by locals.

Shad are long, slender fish with pointed heads and tails, reminiscent of the traditional weaving shuttle which inspired their name. They thrive in the brackish waters where the river meets the sea, feeding on microorganisms in the riverbed. The estuaries of the Yellow River, Bohai Bay, and Laizhou Bay are rich in the fish, with the Yellow River estuary hosting the densest populations.

Shad can grow up to 1.8 meters long, with short, broad heads, large scales, and striking blue-gray backs with lighter bellies marked by dark vertical stripes. Their taste is a perfect blend of freshwater tenderness and saltwater freshness. They can be steamed, stewed, or salted, with each method highlighting a distinct flavor.

The shad's head contains a soft, fragrant fat that melts in the mouth and is considered the most flavorful part. Fresh or cured, shad remain a seasonal treasure, offering a taste of Dongying's culinary heritage and the richness of its waters.
