Updated: 2017-08-28
Crispy rice is a traditional snack for the people of the Bouyei ethnic group in Wangmo county, Qianxinan Bouyei and Miao autonomous prefecture, especially for important occasions such as weddings and birthday celebrations.
Bouyei crispy rice is often made from multi-colored sticky rice, using the colors of black, red, purple, yellow and white.
Bouyei people believe that colorful rice is good for one's health. Black rice nurtures the spleen and stomach; red rice protects the heart; purple rice is good for the liver; yellow and white rice - for the eyes and lungs.
The colorful rice is dyed from pure natural materials. People go to the mountains to collect leaves and herbs as materials for the dye, before choosing high-quality glutinous rice and coloring it with maple leaves for black, sapanwoods for red, comfreys for purple and daylily flowers for yellow.
To make the rice crispy, the rice is steamed and then dried before being fried in a special oil. Then the rice is mixed with sugar, peanuts and sesame.
The dish is popular with people of all ages. Elderly locals prefer to soak the treats in hot water and enjoy the sweet taste.
