Shuji 'Gangzi noodles'

There is a saying in Xingyi that "if you don't try Gangzi noodles, you can't say you've been to Xingyi". These noodles were created by Shu Ze'an at the end of the Qing Dynasty (1644-1911) and the method has been handed down by the Shu family for generations. Making them involves three steps -- kneading the dough, rolling it out, and cutting it. They're made of flour and egg with a special formula, with the noodle having a thickness of less than 0.3 mm and after boiling, are chewy and delicious.
