Jinyun duck is well known, but mainly for the way the ducks are bred. Jinyun county in Lishui has a long history of raising ducks. During the reign of Emperor Qianlong (1711-99) in the Qing Dynasty (1644-1911), Jinyun set up hatching farms.

As duck breeding is still the main family sideline of Jinyun farmers, duck stew is a common dish among these people. The ducks can also be roasted, fried or steamed.

After years of development and innovation, Jinyun duck became a signature dish of Jinyun.
