Expat falls in love with Quzhou freshwater fish

Andong, an expat from the United States who has been living in Hangzhou for 10 years, fell in love with freshwater fish during his first visit to Kaihua county in Quzhou.
He usually dislikes eating fish due to the bones. However, after tasting the fish soup, he fell in love with it.
Kaihua county is located at the junction of Zhejiang, Anhui, and Jiangxi provinces and is known for its freshwater fish.
It is said that the cultivation of freshwater fish became popular among farmers in Kaihua during the Ming Dynasty (1368-1644).
Farmers in Kaihua have used mountain streams for fish farming since the Ming Dynasty. Kaihua's natural conditions give the clearwater fish raised in flowing water ponds a tender and slightly sweet taste.
