San Feng Qiao braised pork ribs originated during the years of emperor Guangxu's reign (1875-1908).
In order to make full use of the spare pork backbones and sternal ribs, Mo Shengxing Restaurant, which was located near the Wuxi South Gate, added spices to them and stewed the spares until they were meltingly tender. The dish was named "braised pork ribs" and was sold to go with spirits.
In 1927, Shen Yu Meat Restaurant (the predecessor to the San Feng Qiao Meat Restaurant) opened for business, and it refined the cooking technique of meat bones (the commonly-known name of the braised pork ribs) to make them taste better.
