Silver silk noodle is a traditional food for Han Nationality in the Wuxi and Changzhou, Jiangsu Province and in Shanghai. It was invented by Changzhou Weixiangzhai Noodle Restaurant, a centennial restaurant, in 1912. It requires exquisite ingredients and strict procedures to follow in order to make it. It is thin like silk, grey-white like silver, which also gives it its name, but also soft and smooth, and pliable and non-stick.
In order to make it, mix egg white with flour, rub it and then use serrated noodle knife to cut them into noodles. Finally, cook them according to your taste to create lovely dishes.
